This is my version of home cooked Punjabi-Kenyan heartiness.
No.1 - My version of the PERFECT Chaa Da Cup!
7 different ingredients - 15min to prepare - Serves 1 person
Ingredients:
1 teaspoon - loose tea leaves (Kericho Gold preferably).
1.5 (flat) teaspoons - brown/white sugar, jaggery or honey (non-essential ingredient).
2 pods - cardamom.
1 piece - cinnamon.
1 piece - ginger (mashed or finely sliced).
1 cup - water.
0.5 cup - milk.
Method:
Boil 1 cup of water in a small pot, add 1 teaspoon of loose tea leaves and let the water boil allowing the leaves to open up.
Further add 2 opened pods of cardamom, 1 small piece of cinnamon, 1.5 teaspoons of brown/white sugar, jaggery or honey (sweeteners are non-essential ingredients) and 1 small piece of mashed/finely sliced ginger to the boiling water. Let all the ingredients boil together for around 10 minutes.
After 10 minutes add 0.5 a cup of milk to the mixture and let it all boil, allowing both the water and the milk to cook together until the tea comes to a rise.
Sieve the tea into small/big mugs, glasses or steel cups and serve.
