This is my version of home cooked Punjabi-Kenyan heartiness.

No.11 – Red Chole (Chickpeas) with Kachumbari

4 different ingredients - 30min to prepare - serves 5 people

Ingredients:

1 teaspoon (flat) - cumin seeds (jeera).

1 teaspoon (flat) - salt.

1 bowl (boiled) - chole (chickpeas).

1 bowl - kachumbari (onions, tomatoes, green chillies).

Method:

Making the Kachumbari:

Wash, cut and dice 1 tomato and 1 onion into small cubes, cut 1 spicy green chilli into small thin slices and mix all the ingredients together in a bowl.

Making the Whole (Chickpeas):

In a large pot boil one bowl full of red chole (chickpeas) in hot water and let them soften down, once they are soft drain them out in a colander.

Heat cooking oil in a pan, add a teaspoon (flat) of cumin seeds (jeera) and 1 teaspoon (flat) of salt. When the cumin seeds (jeera) are sizzling add the softened chole in the pan and mix them well together.

Add the chole (chickpeas) and the Kachumbari in a bowl side my side or together and give it a mix, finally serve it all with a hot steaming Chaa Da Cup - Please!
