This is my version of home cooked Punjabi-Kenyan heartiness.

No.12 – Muli Pronte (White Radish filled Chapatis)

7 different ingredients - 30min to prepare - serves 5 people

Ingredients:

1 bowl - wheat flour.

2 long medium sized - white muli (radish).

1 medium - onion.

1 teaspoon (flat) - red chilli powder.


1 teaspoon (flat) - salt.

1/2 teaspoon (flat) - cumin seeds (ajawain)

250ml - water.

Method:

Making the Wheat Dough:

In a large dish add a bowl of plain wheat flour and knead it with 250ml of water, add the water in small quantities and knead the flour into the water to combine and form as a dough.

Making the Muli (Radish) Mix:

Wash, cut, peel and grate 2 long medium sized white radishes and dice 1 medium sized onion in a bowl. Add a teaspoon (flat) of salt and red chilli powder, alongside half a teaspoon (flat) of cumin seeds (ajwain). Mix all the ingredients together in a bowl and let it rest for a few minutes.

Making the Pronte (Chapatis):

Make 2 small balls out of the wheat dough, the size of one's palm, by hand and roll them out flat using a rolling pin creating 2 medium sized chapatis. Fill one chapati, laid flat on the ground/chakla, with a tablespoon full of the muli (radish) mix and seal it with the other chapati pinning down its sides onto the bottom chapati.

Roll out the filled chapati with a rolling pin, using flour as a non-stick base whenever necessary, creating a large round chapati and shallow fry it on a tava/griddle on medium heat in some ghee.

Once the pronte (chapatis) are golden brown and cooked on both sides take them off the tava/griddle and place them onto a paper/cloth towel to rest. Finally, serve the pronte (chapatis) with some butter, yogurt, achaar and a steaming hot Chaa Da Cup - Please!
