This is my version of home cooked Punjabi-Kenyan heartiness.
No.13 – Sakarpare
4 different ingredients - 30min to prepare - serves 5 people
Ingredients:
1 bowl - all purpose flour.
3 tablespoons - ghee.
1 bowl - brown/white sugar.
1/2 bowl - water.
Method:
Making the Chasni (sugar Syrup):
On low heat in a frying pan, add 1 bowl of water and 1 bowl of sugar. Allow the 2 ingredients to combine and come to a boil, forming a sugar syrup.
Making the Sakarpara Dough and Rolling it out:
In a large bowl add 1 bowl of all-purpose flour, 1/2 a bowl of water and 3 tablespoons of ghee, knead all the ingredients together to create a semi-soft dough.
With a rolling-pin roll the dough out onto a flat surface/chakla, using a sharp knife cut the rolled dough into a square - taking off the edges. Cut long strips on the middle of the square, keeping 1/2 an inch of space between each strip and the edges of the square.
Separate each strip slightly by opening them up. Bring in both edges vertically from one side to the other, pinch both the edges of the dough to create a leaf like structure. Fold one edge of the dough inward at the centre of the sakarpara , towards the back.
In a large pan/karai add vegetable oil/ghee on medium heat, when the oil/ghee is hot add the dough into the pan/karai and let the dough cook by frying it. Once the sakarpara dough is golden brown take it out of the pan and add into the chasni (sugar syrup). Coat the whole sakarpara with the chasni (sugar syrup) and take it out once you think it's enough.
Finally serve your chasni (sugar syrup) coated sakarpare with a steaming hot Chaa Da Cup - Please!
