This is my version of home cooked Punjabi-Kenyan heartiness.
No.18 – Sweet Potato Tikki
10 different ingredients - 30min to prepare - serves 5 people
Ingredients:
1 tablespoon - butter.
2 medium sized - carrots (grated).
4 large/medium sized - sweet potatoes (mashed).
1 large - white potato (mashed).
1 large - onion (diced).
3 large cloves - garlic (paste).
1 large stem - ginger (paste).
2 large - green chillies (paste).
1 tablespoon (flat) - pousin powder.
1 teaspoon (flat) - salt.
1/4 teaspoon (flat) - haldi (turmeric powder).
1 teaspoon (flat) - garam masala.
Method:
Wash, boil, peel and grate 4 large/medium sized sweet potatoes and 1 large white potato. In a large bowl mix the grated sweet potato and white potato adding a bowl of grated carrots, 1 large onion diced, 1 tablespoon of ginger, garlic and green chilli paste, 1 teaspoon (flat) of pousin powder, salt, garam masalsa and 1/4 teaspoon (flat) of haldi.
Once you've mixed all the ingredients thoroughly, create small miniature balls of the mixture using your hands and flatten them out to create small tikkis (patties). In a pan add a tablespoon (flat) of butter, once it starts sizzling add the patties to the pan (one by one) and shallow fry them on each side allowing them to cook.
Once they've turned golden brown on each side take them out and place on a paper towel to soak off the excess fat. Finally serve your tikkis with a hot steam Chaa Da Cup - Please!
