Chaa Da Cup - Please!

Chaa Da Cup - Please! is a food blog created for all food lovers

(n.b - mostly chai loving lovers).

The various mixtures of ingredients and recipes complement a hearty Chaa Da Cup! - you'll probably be looking (asking) for one ;)

This is my version of home cooked Punjabi-Kenyan heartiness.

No.21 – Panjiri - Protein Energy Balls

16 different ingredients - 1hours to prepare - serves over 10 people

Ingredients:

200gms - oat flour (powdered).

50gms - wheat flour.

200gms - ghee.

200gms - gur (jaggery).

20gms - besan (gram flour).

10gms - till (sesame seeds).

10gms - flax seeds.

20gms - sund (ginger powder).

10gms - saunf (aniseed).

10gms - ajwain (carom seeds).

20gms - goond (edible gum).

20gms - phul makhane (lotus seeds).

20gms - chaar magaz.

100gms - cashew nuts.

100gms - almonds.


50gms - walnuts/pecans.

20gms - raisins.


Method:

Making the dry mixture:

1.) In a large pan/karai add a tablespoon of ghee and roast the almonds, cashew nuts, walnuts/pecans, char magaz, phul makhane (lotus seeds), till (sesame seeds) and flax seeds, individually.

Once lightly cooked, grind together all the almonds, cashew nuts, walnuts/pecans, char magaz, phul makhane, till (sesame seeds) and flax seeds.

In a large bowl add all the raisins to the mixture and mix it together.


2.) In a bowl add the sund (ginger powder), saunf (aniseed) and ajwain (carom seeds) and mix it together.

Making the Goond (sugar crystals):

Add 2 tablespoons of ghee in large pan/karai, once the ghee is hot add the goond until it separates and crush it into paste in a mortar grinding machine.

Making the wet mixture:

In a large pan/karai add a 200gms of ghee, once the ghee is hot add the wheat and oat flour and let it cook. Add the besan (gram flour) into the pan and let all the ingredients cook together. Once the mixture turns golden brown, add the goond, gur and both the bowls of dry mixture, and mix all the ingredients together thoroughly.


Making the Ladoo/Pinia:

Once all the ingredients are thoroughly mixed together, make small round balls or put the mixture in a pini mould and create medium shaped panjiri balls.


Finally serve the panjiri ladoo/pinia with a steaming hot Chaa Da Cup - Please!
