This is my version of home cooked Punjabi-Kenyan heartiness.

No.22 – Wheat Flour Stuffed Pancakes

15 different ingredients - 1hours to prepare - serves over 5 people

Ingredients:

500ml - water.

1 bowl - what flour.

1 large - tomato (diced).

1 large - carrot (grated).

1 large - potato (grated).

2 large cloves - garlic (paste).

1 medium stem - ginger (paste).

2 medium - green chillies (paste).

1 large - onion (diced).

1 bowl - yogurt.

1 tsp (flat) - jeera.

1/4 tsp (flat) - haldi.

1/4 tsp (flat) - red chilli powder.

1 tsp (flat) - salt.

1/4 tsp (flat) - hing.

1 tsp (flat) - jawain.

Method:

In a large bowl add 1 medium sized bowl of wheat flour, 500ml of water and a medium sized bowl full of yogurt, mix all the ingredients together and create a runny paste.


Wash, cut, peel and dice 1 large onion and tomato. Wash, peel and grate 1 large carrot and potato. Peel/wash and grind 2 large cloves of garlic, 1 medium stem of ginger and 2 medium sized green chillies creating individual pastes.

In a separate large bowl add all the diced, grated and ground ingredients, add 1tsp (flat) of jeera, salt and jawain, and 1/4tsp (flat) of haldi, red chilli powder and hing, mix all the ingredients together well.

Pour and flatten out a (small) ladle full of the wheat flour paste onto a semi-hot tava/griddle creating a pancake like shape, add a tablespoon full of the vegetable mixture onto the pancake and another (small) ladle full of the wheat flour paste sealing the vegetable mixture onto the pancake.

Pour a tablespoon full of ghee/oil onto the tava/griddle and let the pancake shallow fry in the ghee/oil, flip the pancake over and pour another tablespoon full of ghee/oil, allow the pancake to cook on both sides and and inside. Make sure your tava/giddle is on low heat.

Once both sides turn golden/brown and crispy, take the pancake off the tava/griddle and place it onto a plate with a cloth/tissue on it, allowing the extra ghee/oil to soak off.

Once the pancakes have slightly cooled off, serve them with some raitha/pickles/chutney and a steaming hot Chaa Da Cup - Please!
