This is my version of home cooked Punjabi-Kenyan heartiness.
No.27 – Pizza Subs
10 different ingredients - 1hours to prepare - serves over 5 people
Ingredients:
250 - 500gms - cheese.
2 large - tomatoes (diced).
1 can/ 3 large cobs - sweet corn (shucked).
250gms - mushrooms (sliced).
2 large - red/white onions (sliced).
3-4 long - green chillies (finely chopped).
2 tbsps - basil.
2tbsps - mixed herbs.
1 large pot - tomato paste (contains: tomatoes, mixed herbs and salt).
2-3 packets - flat bread (contains: all purpose flour, milk, butter and salt).
Method:
Making the Tomato Paste:
Grind up 5-7 large tomatoes in a grinder creating a tomato puree, boil the puree in a large pot and add 1 teaspoon of mixed herbs and salt. Let all the ingredients cook in the pot for about 15min to combine as one, once the puree comes to a heavy boil set it aside to cool down.
Making the Flat Breads (if you don't/can't get any packeted flat bread):
Combine butter and milk and heat until the butter is just melted. Combine 2 cups of all purpose flour, salt, butter and milk in a bowl, sprinkle your work surface with flour then knead the mixture over it for a few minutes until a smooth dough is formed (doesn't need much kneading, add extra flour if the dough is too sticky). Allow the dough to rest for 30min or so. Cut and roll the dough into palm sized balls and roll them out flat using a rolling pin.
In the oven/on a griddle/tava, place the rolled out flat bread and let each side cook until you see a puff and they've turned golden brown. Take them off/out of the tava/griddle or oven and set them aside to cool down.
Making the Pizza Sub:
Cut the cooked flat breads into halves, not through the middle, but from the top creating 2 open pieces of flat breads. Lay both sides down on a chopping board, cooked side down, pour over 2 tablespoons of the tomato paste and spread the paste all over the flat breads.
Add a handful of grated cheese onto the paste as a first layer, using a large tablespoon add 2 tablespoons of all the veggies (diced tomatoes, sweetcorn, sliced mushrooms and red/white onions, finely chopped green chillies) onto the flat bread and cover the veggies with an extra layer of cheese creating a pizza sub.
Place the pizza sub in the oven at 180 degrees for 20 min, allowing all the cheese to melt through, letting all the veggies cook through.
Once the top layer of the cheese is golden brown and the bottom of the flat bread is golden brown and crispy, take them out of the oven and serve your pizza subs with a steaming hot Chaa Da Cup - Please!
