This is my version of home cooked Punjabi-Kenyan heartiness.

No.29 – Mixed Herb Baked Potatoes

8 different ingredients - 1hour to prepare - serves over 5 people

Ingredients:

7 - 9 potatoes.


5 large - garlic cloves (paste).


1 tbsp - salt (flat).


1 tbsp - parsley.


1 tbsp - mint.

1 tbsp - mixed herbs.


1 tbsp - basil. 3 tbsp - paprika. Method:

Peel, wash and cut the potatoes into medium sized cubes and place them in a baking dish. Drizzle a hearty portion of vegetable or olive oil over the potatoes then add the paste of 5 large cloves of garlic, 1 tbsp of salt (flat), 1 tbsp of parsley, 1 tbsp of mint, 1 tbsp of mixed herbs, 1 tbsp of basil and 3 tbsp of paprika to the potatoes. Using a wooden spoon mix all the herbs into the potatoes and bake the dish into the oven for 30 min, toss the potatoes in the dish after 15 min.


Once the potatoes turn golden brown and slightly crispy, take the dish out of the oven and serve it with a steaming hot char da cup - please!
