This is my version of home cooked Punjabi-Kenyan heartiness.
No.44 – Fruit and Custard Pudding
2 different ingredients - 1hour to prepare - serves over 5 people
Ingredients:
1 tin - fruit cocktail (preferably Del Monte)
1 pint - custard.
Method:
Drain the fruit from the excess syrup found in the fruit cocktail tin into a colander and out into the sink. You need your fruit to be slightly damp not soaked.
In a large bowl add a whole pint of custard (with 2-3 tbsps of milk, should you want to think the custard down, and mix it all), pour the fruit cocktail into the custard and mix it all together properly.
Prepping the fruit cocktail:
Should you not have any access to a fruit cocktail tin, you can always wash and cut the following fruits into small pieces to make a fruit cocktail. I.e., apple, pear, grapes, peaches, mango, cherries, pineapple and anything more you want.
Prepping the custard:
Should you not have access to a ready made one, you can use either the powder custard or make it from scratch

Powder Custard:
Ingredients:
1/4 cup custard powder, 2 1/2 cups (625ml) milk, 2 tbsp caster sugar
Method:
Combine custard powder and 1/4 cup of the milk in a small jug and stir until smooth.Place custard mixture, sugar and remaining milk in a small saucepan over medium-low heat, stirring constantly until custard comes to the boil and thickens. Simmer, stirring for 1 minute.
Home made Custard:
Ingredients:
200ml double cream, 700ml whole milk, 4 large egg yolks, 3 tbsp cornflour, 100g caster sugar, 1 tsp vanilla extract.
Method: Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly. Wipe out the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon until the custard is thickened, but before any lumps form. Eat hot or cold.
