This is my version of home cooked Punjabi-Kenyan heartiness.
No.46 – Dry Garlic Poison Aloo-Gobi
9 different ingredients - 1hour to prepare - serves over 5 people
Ingredients:
1/2 - gobi (cauliflower).
2 large - aloo (potatoes).
1 handful - methi (fenugreek) (chopped).
2 large cloves - garlic (paste).
1 small/medium stem - ginger (paste).
1 tsp (flat) - pousin powder.
1 tsp (flat) - jeera (cumin powder).
1/4 tsp - haldi (turmeric).
1/4 tsp - salt.
Method:
In a pan add some ghee/oil and let it warm up, add 1 tsp (flat) of jeera (cumin seeds) to the warm-hot ghee/oil and let the hot ghee/oil split them open.
A few minutes later add the paste of 2 large cloves of garlic and 1 small/medium stem of ginger to the jeera (cumin seeds). Add 1/4 tsp of haldi (turmeric powder) and salt, mix all the ingredients together and let them open up and combine with each other.
Wash, cut and chop the methi and add it to all the ingredients in your pan, and give everything a good mix.
Wash and peel the cauliflower and potatoes, and cut them into small/medium sized pieces/wedges. Dry them and add them to the pan, giving everything in the pan a good mix, allowing it all to cook.
Finally once the cauliflower and potatoes are soft, take the pan off the heat and serve the dish in a large bowl with a steaming hot Chaa da Cup - Please!
