Chaa Da Cup - Please!

This is my version of home cooked Punjabi-Kenyan heartiness.

No.6 - Kachumbari Besan Purre (Pancakes)

7 different ingredients - 30min to prepare - serves 5 people

Ingredients:

1 - tomato.


1 - onion.

1 spicy - green chilli.

1 bowl - besan (gram flour).

1 teaspoon (flat) - ajwain (carom seeds).

1 teaspoon (flat) - salt.

250 ml - water.


Method:

Making the Kachumbari:

Wash, cut and dice 1 tomato and 1 onion into small cubes, cut 1 spicy green chilli into small thin slices and mix all the ingredients together in a bowl.

Making the Pure (Pancakes):

In a large dish add 1 bowl of besan (gram flour), 1 teaspoon (flat) of salt, ajwain (carom seeds) and 250 ml of water. Using a whisk mix all the ingredients together to create a lump free semi thick paste.

Add the kachumbari into the paste and using a flat wooden spoon mix all the ingredients together.


Using a deep ladle, spoon the mixture onto a hot pan in some vegetable oil, spread the mixture round in a circle to create a purra (pancake) shape. Shallow fry the purra (pancake) on both ends until it turns golden brown and crispy.

Let the purra (pancake) rest and soak off on a dry paper towel for a few minutes, finally serve the purre with some sauce/chutney and the perfect Chaa Da Cup - Please!
